Mrs Laband’s Carrot Cake

This is the best carrot cake ever. (Susie, this one is for you). Beware of sugar coma though…


  • 3 eggs
  • 1 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp bicarb of soda
  • 1 cup oil
  • 1 cup coarsely crushed pecans
  • 2 1/2 cups grated carrots
  • 1 1/3 cups flour
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 3/4 cup dessicated coconut
  • 1 cup raisins

Beat the eggs and the sugar until fluffy. Add oil slowly while mixing and then beat again to get the mixture nice and fluffy. Sift the flour, baking powder, bicarb, cinnamon and salt and fold into the mixture. Also fold in the crushed nuts, desiccated coconut, raisins, and the grated carrots. Pour the mixture into two baking pans and bake for half an our at 180 degrees

Icing ingredients:

  • 3 TBS cream cheese
  • 60g butter
  • 1 tsp vanilla
  • 2 cups icing sugar

Cream the butter and icing sugar. Add the vanilla and cream cheese. Beat until smooth.
