Butternut, lentil and feta salad

Last night we made a butternut, lentil, blue cheese tarte tatin and I kept some of the roast butternut and lentil aside for a lunch salad today.

Ingredients

  • Roast butternut
  • Lentils
  • Baby tomatoes
  • Rocket
  • Almonds / pumpkin seeds / sunflower seeds
  • 1 round of feta

Dressing

  • 1 Tbsp olive oil
  • 1 Tbsp apple cider vinegar
  • 1 Tbsp balsamic
  • Half tsp mustard
  • Drizzle honey
  • Salt and pepper
  • Dried dill

Make the dressing in a bowl. Add the lentils and butternut. Slice up some baby tomatoes. At the moment it isn’t really tomato season, but Everfresh have these nice baby tomatoes. They are a little expensive, but delicious. Pick some rocket from the garden. Crumble the feta over the top. Dry roast some almonds, pumpkin seeds or sunflower seeds and sprinkle over the top. Normally I would use pumpkin seeds, but I have run out. Toss the salad and eat.
