Lentil and mushroom rice

Still in Hogsback, this dish was made with the leftovers from the lentil rice we had made the night before. Vannessa rummaged in the fridge and found some delicious large mushrooms so this is what she concocted…

Ingredients

  • Ingredients from lentil rice
  • 2 onions
  • 2-3 cloves of garlic
  • 4 large mushrooms
  • Black pepper

Chop the onions and fry on a lowish heat until they start browning and softening. Then chuck in the garlic. When the garlic is browning slightly, add the mushrooms. Add a bunch of ground black pepper. Once the mushrooms are soft, add the leftover rice. The mushrooms will excrete a delicious mushroomy liquid which gives the rice a great new flavour. You can add more seeds at this stage if you wish.

We served this with Ian’s dhal and yoghurt. It could also be served with a tomato based dish such as the brinjal and feta bake.
