The Savage Kitchen: Courgette Fritters

Yesterday evening I had the pleasure of friend and local foodie, Anna Savage, cooking me dinner. Inspired by a Nigella Lawson recipe, Anna made courgette fritters, garlic yoghurt and a delicious fresh pea, tomato and cucumber salad. There were only 2 of us, so you would need to double the recipe if you are cooking for more people (although a third person could have joined in if we weren’t so greedy).

Ingredients for fritters:

  • 3 courgettes (baby marrows)
  • 6 small spring onions
  • Handful of chopped mint
  • 1 round of feta (at least)
  • Heaped tsp of smoked paprika
  • 2 Tbsp flour
  • 1 egg
  • Salt and pepper to taste
  • Oil for frying

Grate the courgette into a mixing bowl. Chop the spring onions and add to the courgettes. Finely chop the mint and add to the mix. Crumble the feta and add the paprika and flour. Crack the egg over the mixture and mix everything together thoroughly. Heat some oil for frying. Take a heaped table spoon of the courgette mixture and fry in the oil until brown. Turn over and fry the same on the other side. Once they are done, allow them to drain the oil on newspaper.

Ingredients for salad:

  • Baby tomatoes
  • Cucumber
  • Fresh peas
  • Olive oil, salt and pepper to dress

Peel and chop the cucumber into small pieces. Halve the baby tomatoes. Shell the fresh peas and add them raw. Dress lightly. You could serve this with any salad, but I highly recommend including fresh peas. Shelling them is the best part.

Ingredients for garlic yoghurt:

  • Small tub of plain yoghurt
  • 1 clove of garlic
  • pepper

Crush the garlic and mix in with the yoghurt. Add pepper to taste.

I was supposed to take some food home for Dean, but we gibbered most of the fritters and all of the yoghurt and salad: they were so delicious. We did manage to save 2 for the captain, which he devoured happily when I got home.

    Hey Rike, where’dyou buy that smoked paprika?

    • That particular, very beautifully packaged, smoked paprika is Anna’s and is from Spain. I have seen some at Woolworths and I have been told you can also get it from Everfresh in Durban. I’ll have a look next time I am there and send you some prices.

    Haha was coming here with the same question – I’ve been looking for it everywhere… As much as I’m loathe to I may just have to get some at Woolies …

    you should be able to get it at everfresh however if you can’t find any then substitute it for cayenne pepper or just leave it out. it will still be delicious!
