Dill potato salad

IMG_8515This salad reminds me of my (late) German grandmother and her sister – a staple on their tables.

  • Baby potatoes
  • 2 -3 small red onions
  • 4-5 gherkins
  • A generous handful of dill
  • 3 Tbsp of olive oil
  • 3 Tbsp of apple cider vinegar
  • 1 teaspoon of mustard
  • Salt and pepper

Boil the potatoes with some salt. Drain them and let them cool before cutting them into slices. Finely chop the onions, gherkins and dill. Mix the olive oil, apple cider vinegar and mustard. Mix together and add salt and pepper.
